In our home we typically eat Latin Cuisine. My husband’s family is Puerto Rican, and over the years I have been introduced to many wonderful and flavorful dishes from all around Latin America. I love the way that you can add so much flavor to just a few staple foods and make a really great dish. Another great thing about these foods, is that they can very easily converted into vegan dishes and we all agree they taste great! Although, the best thing about all of these dishes is that get a full meal just by the combination of starches, proteins, vegetables and fruits. So for this week I wanted to show you a couple of latin dishes we make in our home.
The first dish we made this week, was simply a vegan take on a traditional mexican taco. What makes this more nutritious than most tacos, is that we used corn tortillas which have more fiber and more whole grains. As the name states these tortillas are made of corn which in itself is more nutritious, because of the fiber, vitamin C properties and magnesium, just to name a few. The other wonderful thing about this dish was that it quick and easy to make. I love dishes that I can make on the spot and not have too many complexities, so this one hit the mark. For this dish in particular we used Beyond Meat Chicken. This product is vegan of course and made from soy. The Beyond Meat Chicken is also great to have in wraps or salads.
If you want to add more to the side of this dish you can add ¼ cup of cooked brown rice to your plate. Bonus: for a little extra flavor spritz a little lime on the rice for an extra zest that will compliment your tacos. You can also add a variation to this taco by mixing in black beans or pinto beans. Vegan "Chicken" Tacos
Servings 4 Prep Time: 5 Minutes Cook Time: 10 Minutes Total Time: 15 Minutes
4 Corn tortillas
½ bag Beyond Meat “Chicken”
1 packet of Sazón
1 tsp Adobo
1 tbsp Olive oil
½ cup Salsa
1 tbsp Dairy Free Sour Cream
½ Cup Diced Onions
½ cup Shredded Lettuce
¾ cup Diced Tomatoes
In a pan on medium heat, cook your Beat Meat and oil, for about 6 minutes or until golden brown
Cut up your lettuce, Tomatoes and Onions
Warm up your tortillas, there are two ways you can do this, one way is by using a warm pan on the stovetop. Place your tortilla on the pan for just 30 seconds and then flip for an additional 30 Seconds Or you can put them in the microwave, separated and cook for 15 seconds.
Add your spices to the “chicken”
Assemble your tacos with sour cream, salsa and enjoy!
