Have you ever had a moment where you are unsure of what you are going to cook? Yeah, me too. Some days when we cook, we aren’t sure what to make so we check out the pantry to see what we can come up with. It typically sounds like this: “I don’t feel like going to the grocery store.” “What could I possibly make here, that I won’t have to go out to get a few more ingredients for?” I scour the pantry looking for signs of life and then it hits me. “I could add this with this and it will be perfect on this!” It’s an inner dialogue I have all to often and is how many of my recipes are birthed. It’s also how many good dishes come to life! I love being creative with what we have because it takes us out of the norm of what we eat. It’s like slicing a potato too thin to make a potato chip, it’s a test an accident and it becomes the most delicious accident you have ever encountered. Well at least for me it was but that’s how this lovely pasta was created!
I would equate this sauce to alfredo but with a better taste and no dairy! This green goddess is filled with vitamins from the peas, and protein from the nuts. I love that you get a great serving of vegetables from this sauce alone and you can pair it with one of my favorite ingredients, noodles! I also added nutritional yeast to add that cheesy flavor, but more importantly to give us a good serving of B12 and folic acid. I make a homemade cashew sauce with this pasta that will give that creamy texture, and any you have leftover can be stored for later use. We love to pair this with bowties, but don’t limit yourself to just that noodle. You can also find a vegan ravioli or even spaghetti noodles, the possibilities are endless. Either way you will be wowed by the savory taste you get from this one of a kind pasta sauce. I also like to add spinach in this sauce just to give extra iron and vitamins, you can omit this or you can sautee your spinach and add it with the noodles.See how you can create the Green Goddess below.
Green Goddess Pasta
Servings 4 Prep Time 5 Minutes Cook Time 20 Minutes Total Time 20 Minutes
½ Cup cashews
1 cup Water
1 can of Sweet Peas (drained, reserve juice)
1 handful Spinach (optional)
1 Tbsp Garlic
1 Tbsp Onion powder
1 Tbsp Nutritional Yeast
1 Tsp Sage
1 box Bowtie Pasta
Salt to taste
Pepper to taste
To start off you are going to make the cashew sauce. Blend your cashews and water for about a minute until creamy. Then reserve as you may not need the entire mixture.
Next blend your peas garlic powder, onion powder, sage and nutritional yeast and slowly add the cashew cream, blend until smooth add the reserved juice slowly to give it a creamier texture
I like to warm my pasta sauce on low on the stovetop
Cook Pasta, if using bowties this will take about 10-12 minutes or until tender
Drain Pasta and add to your warm sauce
