Not so tuna, Vegan Chickpea "Tuna" Sandwich

When I was a child, one of my favorite lunches was a tuna sandwich. My mom and I would make them and it was always a comforting meal. I loved that we would mix in the ingredients and then share a sandwich either plain or as a tuna melt, which was our favorite. To this day it is one of my favorite recipes and memories, because my mom would always share memories from her youth. Though after I became a meatless eater, I stopped having tuna sandwiches and could rarely find something that lived up to the way my mom used to make it. Which is why when I figured out the sweet spot for this Chickpea “tuna” sandwich, I just had to share it with you.

 

This sandwich is really easy to make, and it’s great to take with you to lunch. You can also have it plain with just some crackers on the side. It really only takes about fifteen minutes from start to finish. Additionally everyone will love this sandwich, this can become your new alternative to tuna sandwiches for the kids packed lunches or even finger food at your next function. In order to make this sandwich inspire the same taste as I used to have as a child I did a few “tricks”. One trick is to add pickle juice. I love this because it makes the chickpea salad creamy without over adding the vegan mayo. I also added a little extra pepper just to give it that extra pizazz. This sandwich is best served on toasted bread, the breading really helps hold everything together. I hope you enjoy it!

 

 

 

Not so Tuna, Vegan Chickpea “Tuna” Sandwich

 

Servings: 5   Prep time: 5 Minutes   Cook Time: 10 Minutes  Total Time: 15 Minutes

 

Ingredients:

 

3 tbsp of Vegan mayo

1 can of Chickpeas drained

1 tsp Garlic powder

1 tsp Onion powder

½ tsp Salt

Pepper to taste

1 Celery stalk chopped

¼ cup of diced Red onion

¼ cup Pickles (I used the hamburger pickles)

1 tablespoon of Pickle juice

 

Instructions:

  1. In a microwave safe bowl, microwave your chickpeas for 15 seconds.

  2. Using a blender, hand masher or food processor, blend your chickpeas until smooth but still chunky.

  3. Next mix the blended chickpeas with the vegan mayo, garlic powder, onion powder, salt, celery, red onion, pickles and pepper to taste.

  4. To add an extra creaminess to your chickpea salad I like to add just a tablespoon of the pickle juice. This gives you flavor and that texture of tuna but no cruelty

  5. Then add to toasted bread, with lettuce, tomato and for a twist on this favorite add shredded carrots
