Vegan Scramble

A great way to start your day is always with a balanced breakfast. It’s the most important meal of the day because you are starting your day off by breaking your fast from the evening before. I love making this because it is easy and fun to put different ingredients in with.

 

So this meal is really easy to make and takes about 20 minutes altogether!

 

All you will need is:

1 block of extra firm tofu

1 tsp Garlic Powder

1 tsp Onion powder

1 tsp of Tumeric

2 tbsp Nutritional Yeast

1-2 Handfuls of spinach

1 tsp of Diary free butter

 

1.So first you need to take out the water in the tofu. If you have never done this before all you have to do it take a few paper towels and place your block of tofu on a cutting board, and press gently on the tofu. This will draw the water out, if you like runnier scramble you can leave some water but if not drain as much as you can.

 

2.Next turn on your pan turn on medium heat, add a bit of diary free butter and add your spinach.

 

3.Next while the spinach is cooking down, crumble your tofu with a fork and add it to your spinach along with all the ingredients. The tumeric will add color.

 

4.Cook your ingredients until the spinach is cooked and your tofu is the consistency your desire. Add your plant based cheese if desired, and salt and pepper to taste.

 

You can eat this on toast, by itself or on a tortilla.  

 

Enjoy!

 

This is my version but feel free to add mushrooms, or tomatoes along with your spinach for added flavoring.

You can also add black beans to make a mexican scramble and put it on to of a tortilla. The possibilities are endless!
