Sweet Potato Boats

Some nights sweet and savory is the way to go. That's why I love having this Sweet Potato Boat and all its glory.


Packed with garlicky greens, flavorful legumes, and to top it off a savory cashew cream. This dish will satisfy your cravings and leave you hungry for more. With four easy parts to this recipe, this one-bowl dish will become a regular in your home. I personally love to make more sweet potatoes so I have leftovers for lunch the next day.


I use an air fryer to cut down on the cooking time in this recipe but you don't fret if you don't own one. You can simply roast your sweet potatoes on a lightly oiled pan or baking sheet, at 450° degrees for 35 minutes. Make sure to cook your potato until it is tender in the middle.


For the cashew cream, if you don't own a high powered blender, I would suggest boiling some water and letting your cashews soak for about 5 mins before blending. Also make extra sauce, for nights when you are in a rush. Just pop in the freezer and reheat on the stove.



Sweet Potato Boats

Prep Time 10 Mins l Cook Time 30 Mins l Total Time 40 mins


Ingredients:

4 medium to large Sweet Potatoes


For the Seasoned Black Beans:

2 cans of Black Beans

1 packet of Sazon

1 Tbsp Garlic Powder

1 Tsp Onion Powder

Salt to taste


Sautéed Spinach:

2 cups of Raw Spinach rinsed

1 tbsp Oil

½ tbsp Garlic

Salt to taste


Cashew Cream:

1 cup of raw cashews (you can choose salted or unsalted)

1 cup of water

5 Tbsp Nutritional Yeast

1 tsp Garlic

Salt to Taste


Instructions:

  1. Poke holes in your Sweet Potato and cook on 400° in the air fryer for 23 minutes

  2. In a small pot, on medium heat cook black beans, for 5 minutes, stirring in Sazon, Garlic Powder, Salt, and Onion Powder. Reduce heat to a simmer and cover. Stirring occasionally.

  3. In a separate pan turn your burner on medium-high, add oil and spinach and cook down for 2 to 3 minutes.

  4. While your spinach is cooking down, mix in your seasonings, continue to cook for 2-3 more minutes until tender. Once tender turn your burner off.

  5. In a blender, blend together cashews, water, Garlic Powder, Onion powder, Nutritional Yeast, and salt to taste.

  6. Blend until smooth and creamy

  7. Remove your sweet potatoes from the air fryer, cut down the middle to create a pocket for your filling.

  8. Top your filling with black beans, spinach, and cashew cream to your heart's content and enjoy!
