Mighty Corn Muffins

A gas station staple for my husband has always been Corn Muffins. He would always love to have them with his dad on special occasions, with coffee at their breakfast table or before a big morning road trip. After we got married he loved to still grab one from the gas station before one of our big trips. Although since his switch to a vegan lifestyle he has left the corn muffins on the shelf. UNTIL we did what we do best and veganize it! So today, I’m bringing you this simple corn muffin recipe. These are great for a morning snack with coffee or even just something to bring to a tea party. Check out this recipe below and see how easy it is to make this sweet treat.

Mighty Corn Muffins
Ingredients
1 ½ cups Yellow Corn Meal
¾ cup All purpose flour
⅔ cup Sugar
1 tbsp Double acting baking powder
1 tsp Salt
1 Cup Non-Dairy Milk (I used Ricemilk)
3 tbs Melted Non Dairy Butter
Directions
Preheat your oven to 400 °F
Grease Muffin Pan or line with paper cups
In a bowl mix together, Corn Meal, Flour, Sugar, Baking Powder and salt
In a separate bowl mix together non-dairy milk and melted non dairy butter
Combine dry and wet ingredients together until well mixed
Distribute the mix in the muffin tin and bake for 20-25 minutes
Let cool and Enjoy!
