Fiesta Fridays: The Stuffed Potato Boat

Whenever I make a recipe, I try to make something that is a reminder of the things I ate growing up but revamping it in a way that fits my lifestyle today. Today I’m giving you a dish that is simple to make and to have at a party, it’s the Potato Boat! Taking that baked potato and making it scrumptious with all the vegan “fixins”. This recipe is great for a Fiesta because you can easily have these “boats” ready to go and your guests can just add whatever toppings they like to this corn and black bean base. They also look really cool once you scoop out the potato on the inside. SO without further ado check out the recipe below for this Baked Potato Boat! Enjoy!

Baked Potato Boat

Servings 2 Prep Time: 5 Minutes Cook Time: 45 Minutes Total Time: 50 Minutes

Ingredients:

2 Idaho Potatoes

½ can Black Beans (Drained)

½ can Corn (Drained)

1 tbsp Dairy Free Cream Cheese

1/4 cup unsweetened Soy Milk

1 tbsp Dairy Free Butter

½ Tsp Garlic

1 Packet of Sazón

Salt to taste

Toppings (optional):

Follow Your Heart Cheddar Cheese

Dairy Free Cream Cheese

Chives

Paprika

Directions:

  1. Preheat your oven to 450°F and wash off potatoes

  2. Poke holes in your potato with a fork and place in a baking pan with some water on the bottom.

  3. Cook for 35 Minutes or until tender

  4. Once tender, cut the potato down the middle and scoop out the potato leaving the potato skin intact and place potato in a separate bowl

  5. Add unsweetened soymilk, butter, garlic and cream cheese then mash potatoes with a masher or using a hand mixer.

  6. Add black beans and corn to mashed potatoes and mix

  7. Stuff your potato boat

  8. Garnish with other toppings and Enjoy!
