Fiesta Fridays: Avocado and Grapefruit Salad

Happy Friday! Today for Fiesta Friday, I have a bit of a different appetizer for your next party. It’s the avocado and grapefruit salad. This dish I picked up from the Netflix series of Queer Eye who got it from Ina Garten; and man I understand why they decided to add it to their repertoire of dishes, it’s simply delicious. This dish is interesting because to me it is paired with two unlikely characters, grapefruit and avocado, but this duo does so much good together you won’t even think twice. I love this dish because it works perfectly to add to your next dinner party as an appetizer. This dish is also great to have after school, if you want to give the kids something a little different other than just the typical fats. The other wonderful thing about this dish is that it’s easy to make and the vinaigrette is made of ingredients that are most likely already in your kitchen. I mean there is nothing better than an easy appetizer that your guests will love. Below I have a few pointers on this dish! Enjoy!

Tips: To cut the grapefruit, using a sharp cut each end of the fruit. Then cut off the remaining peel, until the pulp is exposed then cut in between each membrane. You also have the option to omit the olive Oil, if you choose too. Also when you do serve this to guest make sure to cut the avocados, very close to when your guests arrive and leave them out for no longer than fifteen minutes. Avocados lose their wonderful green hue quickly, but the vinaigrette that you will put on top will help hold the color in for a little longer. Avocado and Grapefruit Salad

Servings 4-6 Prep Time: 10 Minutes Cook Time: 10 Minutes Total Time: 20 Minutes

Ingredients:

1 Tablespoon Dijon mustard

¼ cup freshly squeezed lemon juice

1 ½ tsp Kosher Salt

¾ tsp Black Pepper

½ cup Olive Oil

4 Ripe Avocados

2 large Red Grapefruits

Directions:

  1. In a small bowl mix together your mustard, lemon juice, salt and pepper. Then slowly whisk in your olive oil until well combined.

  2. Cut your grapefruit into slices, without the peel.

  3. Cut your avocados in half and remove the seeds, then cut into slices.

  4. Assemble the grapefruit and avocado slices onto a serving platter, drizzle the vinaigrette on top and sprinkle on a bit of salt and pepper.

  5. Enjoy!
