Vegan Cinnamon Cupcake

If there are two things I love about spring and summer, it’s the heat and the parties. Although, no party is fully complete without a cake to compliment the wonderful array of food that is lined up for guests to enjoy. So instead of having you search for a new idea for a great round of treats, I have veganized the cinnamon cupcake! Made with vanilla and all vegan products, it will be a sure party in your mouth. It will remind you of having a churro and your guests will love it too. So keep reading to see how these were made and what makes them so special.

The secret ingredient in this cupcake is applesauce. Yes it is unlikely character but it’s healthier than using oil, which is a plus for you and those enjoying this cupcake. Also I love when cupcakes are moist and the applesauce does this in an unsuspecting way. What I love about these cupcakes other than how wonderful they taste is the vanilla cinnamon sugar. This topping will take your cupcakes from, “yum” to “oh wow this is delicious!” Check out the recipe below to make your own cupcakes and get your party started!

Vegan Cinnamon Cupcakes

Prep Time: 10 Minutes Cook Time: 18 Minutes Total Time: 28 Minutes

Ingredients

Dry Ingredients:

1 ¾ Cups All Purpose Flour

1 cup Sugar

1 tsp Baking Powder

½ tsp Salt

1 tsp Baking Soda

1 Tsp Cinnamon

Wet Ingredients:

1 Cup Dairy Free Milk

½ cup Applesauce

1 tbsp Apple Cider Vinegar

2 tbsp Vanilla

Garnish:

1 Tsp Cinnamon

2 Tbsp Sugar

Vanilla Frosting (most store bought frostings are vegan as long as it’s not buttercream or cream cheese)

Directions:

  1. Preheat your oven to 350°F, line and spray your cupcake liners

  2. In a large bowl, whisk your dry ingredients

  3. In a medium bowl, whisk your wet ingredients

  4. Add your wet ingredients to your dry ingredients and whisk until well combined

  5. Pour your ingredients into the cupcake liners until it is two thirds full

  6. Bake for 15-18 minutes. You can check to see if they are done by sticking a toothpick or a knife in the middle and if it comes out clean, they are ready to go

  7. Mix together your cinnamon and sugar and set aside.

  8. Let your cupcakes cool

  9. Frost cupcakes, sprinkle on cinnamon sugar and Enjoy!
