Portobello Mushroom Steaks

The cravings, they are inevitable. For me it was always honey barbeque wings. Although how do you curb them when you don’t eat meat? I like to get creative, because there are so many options for meat-like recreations and they don’t always include soy or seitan. So when my husband’s one wish was to have something that reminded him of steak, I was on the hunt to find something that resembled it without meat. And to my surprise, portobello mushrooms were the prize and also a quarter of the price.

So now introducing the vegan steak, all mushroom no meat. This meal is inspired by newer vegans like my husband who have cravings, want an alternative because they don’t want to stop saving the earth. This meal is so easy to make, the only part you need to be patient about is marinating the mushroom (but trust me that is the best part). I marinate my “steak” for at least thirty minutes up to three hours. I love to pair this meal with roasted asparagus and vegan mashed potatoes. So whether it’s date night, treat yourself night or family dinner they will love this and you will too.

Vegan “Steak”

Serves: 3 Prep Time 30 Minutes- 3 Hours Cook Time 10 Minutes Total Time 40 Minutes - 3 Hrs 10 Minutes

Ingredients:

4 Portobello Mushrooms

2 tbsp Soy Sauce

½ Cup Balsamic Vinegar

¼ tsp Steak Seasoning

½ Lemon Juice

Sprinkle of pepper

Directions:

  1. In a large food storage bag add in the soy sauce, balsamic vinegar, steak seasoning, lemon juice and pepper.

  2. Add in the mushrooms and let sit and marinate in the refrigerator for 30 minutes to 3 ½ hours

  3. After marinating, heat your pan on medium heat and place in the mushrooms with marinade. Let these cook for 10 minutes and then halfway through

  4. After cooking serve with sides such as, vegan mashed potatoes, asparagus, and roasted carrots. Or a side salad if you desire.
