Vegan Mashed Potatoes

Mashed potatoes come in a close favorite of side dishes, but unless they are vegan most are filled with butter and dairy milk. So I have created this simple recipe for easy light and fluffy mashed potatoes. Made with Idaho potatoes, dairy free milk and vegan butter, your family will love this as it is paired with your favorite meal. Check out the recipe and enjoy!

Vegan Mashed Potatoes

Serves: 3 Prep Time: 5 Minutes Cook Time 15 Minutes Total Time 20 Minutes

Ingredients:

3 Idaho Potatoes (Peeled)

3 Tbsp Dairy free butter (I used I Can't Believe It's not Butter, Vegan)

1/2 cup unsweetened Soy milk

Salt to taste

Chives (Garnish)

Directions:

1. Peel and boil your potatoes until tender

2. Once tender, drain and add to your bowl

3. Using a potato masher or hand mixer blend until smooth

4. Add in Soy milk and butter and continue to combine

5. Add salt to taste and chives if you like

6. Enjoy!
