Black Bean Burgers

One of the first meatless foods my mom used to make for dinner when I was a kid, were black bean burgers. I love to eat veggie burgers, they are filling, fun to make, and a crowd pleaser at cookouts (trust me on this one). I love that you can pack so much into one patty and then just keep adding things on top. You also have so many options with black bean burgers because they are sold in stores as well, so don’t have to worry about always making a burger from scratch when you are in a pinch. Although when I’m cooking for a group I like to make this from scratch and show off my skills.

The other plus to this dish, is that you get so much protein and some vitamins from the carrots. This is wonderful, because you get to help your guests eat something delicious and nutritious at the same time. I love to add red onion, avocado, lettuce and BBQ sauce to mine. As for my husband loves to load his burgers up southwest style with the works, corn, jalapenos, vegan cheese, lettuce and vegan ranch. So there are many ways to give your burger your signature touch, and your guests will love to try out their combinations as well. Black Bean Burgers

Servings 4 Prep Time: 40 Minutes Cook Time: 10 Minutes Total Time 50 Minutes

Ingredients

2 Cans, cooked Black beans, rinsed and drained

1 Onion, minced

3 Cloves garlic, minced

2 Carrots, shredded

½ cup Quick-cook Oats

1 tablespoon Soy sauce

1 teaspoon Cumin

½ teaspoon Coriander

½ teaspoon Chili powder

¼ teaspoon Cayenne pepper

Salt, to taste

Pepper, to taste

1 tablespoon Olive oil

Directions

1.Drain and cook your beans in a bowl, in the microwave for 15 seconds

2. Using a hand masher or a food processor, blend your black beans until they make a patty like mixture.

3. Mix in your onion, carrots, quick oats, soy sauce, cumin, coriander, chili powder, cayenne pepper, salt and pepper.

4. Form your patties and put them in your freezer for 30 mins, to keep them from coming apart.

5. Cook on your stovetop with a little olive oil in your pan until lightly browned on each side

6.Assemble with your bun and desired toppings, Enjoy!
